Welcome to Our Restaurant restaurant at The Williamsburg Hotel. A stylish newcomer to North Brooklyn, we place emphasis on fresh, seasonal fare and in-house artisan breads, crafted in collaboration with Brooklyn Bread Lab. Led by Head Chef Nicolas Caicedo, this New American bistro ups the dining ante with nightly live music and weekend high tea.

Meet Our Chef

The Heart & The Helm

Chef Nicolas Caicedo began pursuing his passion for food at a very young age. He earned a Bachelor’s degree in Culinary Arts at the esteemed Escuela de Hosteleria Hofmann in Barcelona, Spain. He worked alongside Spain’s highest-Michelin-starred toque Martin Berasategui.  He also worked under Jean Louis Neichel at Neichel and Oriol Rovira at Els Casals.
Chef Nicolas is also no stranger to the New York dining scene, having worked at Morimoto, Hudson Garden Grill, and as a consultant for two different concepts at Gotham Market in Brooklyn.
He’s been recognized by top media across the country, specifically in his home city of Miami, having been featured in Ocean Drive magazine and the Miami New Times while working for well-known restaurateur Stephen Starr.
